來自上普羅旺斯地區的巴儂山羊起司是一款使用用生山羊乳製成的起司。在棕色栗子葉包裹下熟成，並用天然拉菲草繫住。葉子下的巴儂起司無外皮，呈銅色，質地柔軟，絲滑綿密。 巴儂山羊起司的重量介於90克至100克之間，因其棕色栗子葉子包裹易於辨認。外皮呈奶油色或金棕色，其內部柔軟的。山羊乳起司與栗子葉單寧之間的化學反應，讓它口感帶有一絲甜味混和著淡淡灌木叢氣味。並且在栗子葉的保護下，起司內部柔軟而有彈性，同時散發著植物、山羊乳、發酵味與鹹香。
Banon is a cheese made from whole raw goat’s milk. It is matured while wrapped in brown chestnut leaves and tied with natural raffia. Under the leaves Banon is bronze in color and has a soft, creamy texture. Banon AOP, which weighs between 90g and 100g, is easily recognizable by its case of brown leaves. Its flowery rind is cream or golden brown in color, and its paste is soft. On the palate, it is a mixture of sweetness and subtle aromas of undergrowth, the fruit of the alchemy between soft goat's curd and the tannins of chestnut leaves. With the protection of the chestnut leaves, the Banon inside remains soft and pliable. Unwrapping these little parcels reveals a rindless, often sticky and moldy cheese that smells vegetal, goaty, yeasty, and savory all at the same time.
