Myesost, a Norwegian national favourite (often associated with Gudbrandsdalen-style brown cheese), is a proud “caramel cheese” made by slow-cooking whey until it concentrates and naturally caramelises. Rather than being aged, it develops its straw-yellow to caramel hue and signature aroma through this cooking process. The texture is firm and slightly crumbly, while the flavour is bold and distinctive—rich caramelised dairy notes with a gentle, spicy edge and a sweet-savoury finish.
