Mâconnais is the only goat’s milk cheese from Burgundy to hold AOP status, recognized since 2005. Traditionally made in small, farm-based dairies, it often comes in a rounded, truncated-cone or barrel-like shape, about the size of an egg or small cup. This cheese reflects the pastoral heritage of the southern Burgundy countryside.
Young: Moist, soft paste with fresh, tangy flavors, carrying grassy and goaty notes.
Half-dry maturity: Firmer texture with richer aromas of nuts, dried hay, and subtle woody or peppery undertones.
